Our unclassifiable Pestou - a purée of eggplants with basil - is a treat for young and old alike. Pestou is half way between a condiment and a sauce. It goes well with fish and red meat, mustard and pickles, toast, eggs, and prawns. It is difficult not to love it!
Ingredients:
Eggplants, tomatoes, sunflower oil, basil, garlic, sugar, olive oil, salt, black pepper, cayenne pepper (without any colouring or preservatives!).
