Black "grossane" olives from the vallée des Baux picked wrinked in December and treated naturally for 10 month to remove bitterness. Capers of course ("tapeno" in Provençal). At harvest time, there is a smell of truffles floating about in the canning factory.
Ingredients: Black olives, capers, anchovies, spices and aromatic plants, liquor of "Frigolet", vegetable oil, vinegar, salt (without any colouring or preservatives!).
